  • 450 g ripe medium vine tomatoes
  • 1 small whole garlic head
  • 30 ml olive oil
  • Salt and pepper to taste
  • 225 g pasta (spaghetti or fettuccine)
  • 120 g ricotta cheese
  • Fresh basil leaves
  • Grated parmesan cheese (for serving)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Halve the tomatoes and place them in a baking dish. Cut the top off the garlic head and add it to the dish.
  3. Drizzle with olive oil and season with salt and pepper. Roast for about 20 minutes.
  4. Cover with foil and roast for an additional 10 minutes until tomatoes are blistered.
  5. Cook pasta according to package instructions until al dente; reserve some cooking water before draining.
  6. Squeeze roasted garlic into a blender, add tomatoes, basil, ricotta, and reserved pasta water; blend until smooth.
  7. Combine blended sauce with drained pasta in a skillet over medium heat, tossing to coat evenly.
  8. Adjust seasoning if needed and serve garnished with fresh basil and parmesan.
