  • 1/2 cup walnuts (chopped)
  • 2 teaspoons baking powder
  • 2 teaspoons dried rosemary
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 eggs (lightly beaten)
  • 3/4 cup apple juice
  • 1/2 cup Kosterina Olive Oil
  • 1/4 cup dried cherries

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan with cooking spray.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, walnuts, baking powder, rosemary, salt, and lemon juice.
  3. In another bowl, combine the wet ingredients: eggs, apple juice, and olive oil.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the dried cherries.
  5. Pour batter into the prepared loaf pan and smooth out the top.
  6. Bake for about 55 minutes or until a toothpick inserted comes out clean.
