  • 75 gm Water (lukewarm)
  • 84 gm Milk (lukewarm)
  • 1 tsp Dried active yeast
  • 1.5 tsp Sugar
  • 1 tsp Salt
  • 1 tbsp Salted butter (melted)
  • 240 gm All-purpose flour
  • 60 gm Salted butter (cut into logs and frozen)

Instructions

  1. In a mixing bowl, combine lukewarm water, milk, and dried active yeast. Stir until dissolved.
  2. Add sugar, salt, and melted salted butter; mix well.
  3. Gradually add all-purpose flour while stirring until combined.
  4. Knead the dough until soft but slightly sticky. Cover and let rest for 50 minutes.
  5. Perform folds by bringing each quarter of the dough to the center four times.
  6. Proof in a warm place for about one hour or until doubled in size.
  7. Shape the dough into rolls, let them rest again briefly before rolling out into triangles.
  8. Place frozen butter logs on the wide end of each triangle and roll tightly.
  9. Allow shaped rolls to proof again before baking at 200°C (392°F) for about 20 minutes until golden brown.
