  • 5 tablespoons unsalted butter
  • 4 cups chopped baby gold potatoes
  • 2-1/4 cups mirepoix (diced carrots, celery, onion)
  • 1 teaspoon minced garlic
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk
  • 1/2 cup heavy cream
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. In a large pot over medium-high heat, brown the Italian sausage until fully cooked. Remove and set aside.
  2. In the same pot, melt 1 tablespoon of butter and sauté mirepoix for about 5–7 minutes until tender. Add minced garlic and cook for another 30 seconds.
  3. Stir in chopped potatoes, dried herbs, salt, and pepper. Pour in chicken stock and bring to a boil. Cover and simmer for 15–20 minutes until potatoes are fork-tender.
  4. In a medium pot, melt remaining butter and whisk in flour; cook briefly before gradually adding milk. Stir until thickened, then add heavy cream.
  5. Combine the creamy mixture into the soup pot along with cooked sausage and shredded cheese. Stir until cheese melts.
  6. Serve warm with optional garnishes like fresh herbs or croutons.
