  • 3 lb boneless pot roast (chuck)
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup red wine (or more beef stock)
  • 2 1/2 cups beef stock
  • Fresh rosemary
  • Bay leaf

Instructions

  1. Preheat a Dutch oven over medium heat and add 1 tablespoon of olive oil.
  2. Season the pot roast with salt and pepper, then sear in the Dutch oven until browned on all sides (10-12 minutes). Remove and set aside.
  3. Slice onions using a food processor and cook them in the remaining oil until translucent (5 minutes).
  4. Lower heat, caramelize onions for about 20 minutes until golden brown.
  5. Add garlic and maple syrup; cook for an additional 7-8 minutes.
  6. Stir in flour, deglaze with red wine or beef broth, then return the pot roast to cover it fully with the mixture.
  7. Add rosemary and bay leaf; bring to a simmer before covering and transferring to a preheated oven at 300°F.
  8. Cook for about three hours, turning halfway through until tender.
