  • 1 tbsp extra virgin olive oil
  • 1 large garlic clove, minced
  • 1 large brown onion, finely chopped
  • 1/4 tsp fresh thyme, chopped
  • 1/4 tsp fresh rosemary, chopped
  • 1 bay leaf
  • 1/3 cup tomato passata
  • 4 cans (400g each) cannellini beans, drained
  • 3 cups vegetable stock

Instructions

  1. In a large heavy-based pot, heat olive oil over medium heat. Add minced garlic, onion, thyme, rosemary, and bay leaf; sauté for about 8 minutes until onions are golden brown.
  2. Stir in tomato passata and cook on low heat for another 8 minutes until thickened.
  3. Add drained cannellini beans and vegetable stock; simmer uncovered for about 15 minutes.
  4. Blend about 2/3 cup of the soup until smooth and return it to the pot to thicken.
  5. Just before serving, stir in Picada and adjust seasoning as needed.
  6. Serve hot with an extra dollop of Picada on top.
