  • 120 g Oat Flour
  • 45 g Plain Flour (gluten-free if needed)
  • 250 g Strawberries (sliced)
  • 25 g Coconut Sugar
  • 2 tbsp Coconut Oil
  • 1/4 cup Warm Water
  • 1 tbsp Lemon Juice (juice of ½ a lemon)
  • 16 g Corn Starch (or arrowroot flour)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a mixing bowl, combine oat flour, plain flour, coconut sugar, coconut oil, and warm water until a dough forms.
  3. Slice strawberries and toss them with lemon juice, cornstarch, and coconut sugar in another bowl.
  4. Roll out the dough between parchment paper until about 1/2 cm thick; transfer to a baking sheet.
  5. Spoon strawberry filling into the center of the dough, fold edges over the filling and pinch to secure.
  6. Bake for 30-35 minutes until golden brown.
  7. Serve warm or at room temperature.
