  • 1 large sweet onion, finely chopped
  • 3 cups low-sodium beef broth
  • 1 (6-ounce) can tomato paste
  • 2 (10-ounce) cans diced tomatoes with green chilies
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (15.5-ounce) can dark red kidney beans, drained and rinsed
  • 1 (15.5-ounce) can pinto beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cayenne
  • kosher salt and black pepper to taste

Instructions

  1. Brown the ground meat in a skillet over medium heat. Add onion halfway through cooking until soft; stir in garlic for one minute.
  2. Transfer the browned mixture to a slow cooker.
  3. Whisk together beef broth and tomato paste; pour over the meat mixture.
  4. Add diced tomatoes, beans, and spices; mix well.
