  • 1 tablespoon red Thai curry paste
  • 4 cups chicken broth
  • 2 cans full-fat coconut milk
  • 1 pound chicken breasts
  • 8 ounces sliced white mushrooms
  • Brown sugar, fish sauce, lime juice (for flavor enhancement)

Instructions

  1. In your slow cooker, combine onion, garlic, jalapeño, galangal, lemongrass, lime leaves, curry paste, and chicken broth. Stir to mix.
  2. Cover and cook on HIGH for 3 hours or LOW for 6 hours. Stir occasionally.
  3. Remove solids with a slotted spoon; leave broth.
  4. Add coconut milk, chicken pieces, and mushrooms. Stir to combine.
  5. Cover and cook on HIGH for an additional hour or LOW for 2 hours until chicken is fully cooked.
  6. Stir in brown sugar, fish sauce, and lime juice. Adjust seasonings as needed.
