  • 1 lb chicken breast or shrimp
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 cloves garlic
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon cayenne pepper
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley or cilantro, chopped
  • Juice of ½ lime

Instructions

  1. Cook the penne in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil and cook seasoned chicken or shrimp until done. Remove and set aside.
  3. Sauté sliced bell peppers and garlic in the same skillet until tender.
  4. Stir in seasonings, then add heavy cream and Parmesan cheese; stir until creamy.
  5. Combine cooked pasta and protein into the sauce, adding reserved pasta water as needed for consistency.
