  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (roughly chopped) or 1 cup frozen spinach (thawed and drained)
  • 2 cloves garlic (minced)
  • 2 cups marinara sauce
  • Olive oil, Italian seasoning, salt, and pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells in boiling salted water until al dente. Drain and set aside.
  3. In a bowl, mix together ricotta cheese, half the mozzarella, Parmesan cheese, egg, spinach, garlic, salt, and pepper.
  4. Spread half of the marinara sauce at the bottom of a baking dish. Fill each shell with the ricotta mixture and arrange them in the dish.
  5. Pour remaining marinara over stuffed shells and sprinkle with reserved mozzarella. Drizzle with olive oil and season with Italian herbs.
  6. Cover with foil and bake for about 20 minutes. Remove foil and bake an additional 10 minutes until golden.
