  • 250g yogurt (1 cup)
  • 250g coconut sugar (1 + ¼ cup)
  • 1 egg + 1 egg yolk
  • 1 tbsp vanilla extract
  • 60g milk (¼ cup)
  • 85g cocoa powder (¾ cup)
  • 90g oat flour (1 cup)

Instructions

  1. Preheat oven to 180°C (350°F) and line an 8-inch square baking tin with parchment paper.
  2. Slice half of the strawberries for topping; mash the rest in a bowl.
  3. In another bowl, whisk together yogurt, coconut sugar, eggs, milk, and vanilla until smooth.
  4. Add oat flour and cocoa powder; fold until just combined.
  5. Incorporate the mashed strawberries gently.
  6. Pour batter into the prepared tin; smooth the top and arrange sliced strawberries on top.
  7. Bake for 40-45 minutes or until a toothpick comes out with moist crumbs.
  8. Cool completely before slicing into squares.
