  • 325 g graham crackers
  • 230 g unsalted butter (melted)
  • 300 g whipping cream
  • 150 g sweetened condensed milk
  • 1 tablespoon vanilla extract

Instructions

  1. Prepare a lined 9×9-inch pan with parchment paper.
  2. Cook diced strawberries in a saucepan with water until thickened into compote; let cool.
  3. Crush graham crackers finely and mix with melted butter to form the crust.
  4. Press half the mixture into the pan and freeze while making the ice cream filling.
  5. Whip cold cream with vanilla until firm peaks form; fold in sweetened condensed milk and cooled strawberry compote.
  6. Pour the filling into the crust layer and freeze for at least 2 hours.
  7. Add remaining crumb mixture on top, press down, and freeze overnight.
  8. Slice and serve chilled.
