  • 600 g fresh strawberries (finely diced)
  • 400 g coconut milk (1 can)
  • 50 g granulated sugar (adjust to taste)
  • 150 g small tapioca pearls
  • 225 g coconut jellies (drained)

Instructions

  1. In a blender, combine half of the diced strawberries, coconut milk, and sugar. Blend until smooth and transfer to a large bowl. Chill while preparing the tapioca.
  2. In a medium pot, boil water and add tapioca pearls. Cook uncovered for 10 minutes, then cover and let them steam off heat for another 10 minutes until translucent.
  3. Drain the tapioca pearls using a fine mesh sieve and rinse under cold water.
  4. Mix the remaining strawberries and coconut jellies into the chilled strawberry mixture. Adjust consistency with water if needed before serving.
