  • 1 cup sweet corn kernels
  • ¼ cup thinly sliced red onion
  • 1 cup sour cream
  • 2 tbsp mayonnaise
  • ½ cup crumbled Cotija cheese
  • 1 lime
  • 3 cups cooked rice
  • Fresh cilantro

Instructions
