  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 3 cloves garlic (minced)
  • 1 can (8 oz) pineapple chunks (drained)
  • 1 red bell pepper (thinly sliced)

Instructions

  1. Season the chicken with salt and pepper and place it in the slow cooker.
  2. In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger. Pour over the chicken.

  5. Remove cooked chicken; mix cornstarch with water and stir into slow cooker juices. Cook for an additional 15 minutes until thickened.
