  • 1 cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • ½ cup cilantro, chopped
  • ¼ cup green onions, sliced
  • ½ cup creamy peanut butter
  • ¼ cup low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • Optional: 1 tsp Sriracha sauce

Instructions

  1. Heat oil in a skillet over medium heat. Season chicken with salt and pepper, then cook for about 6–8 minutes per side until golden brown and cooked through. Let cool before slicing into bite-sized pieces.
  2. Chop all vegetables into bite-sized pieces for a colorful presentation.
  3. In a bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, and Sriracha until smooth.
  4. In a large bowl, combine the chopped vegetables and sliced chicken. Drizzle with the dressing and mix until evenly coated.
  5. Garnish with cilantro and green onions before serving. For enhanced flavors, chill for about 30 minutes before enjoying.
