  • 3 large romaine hearts (chopped)
  • 10 oz bacon (about 10 slices)
  • 1 cup slivered almonds
  • 1 pint grape tomatoes (halved)
  • 1 cup shredded Swiss cheese
  • 1/2 cup finely shredded parmesan cheese
  • 1 1/2 cups croutons
  • 3/4 cup light olive oil
  • 1/3 cup fresh lemon juice
  • 2 minced garlic cloves
  • 1 tsp dijon mustard
  • 1 1/2 tsp honey
  • 3/4 tsp salt (or to taste)
  • 1/2 tsp freshly ground black pepper (to taste)

Instructions

  1. Prepare the dressing by mixing olive oil, lemon juice, garlic, dijon mustard, honey, salt, and pepper in a jar. Shake well and refrigerate.
  2. Toast slivered almonds at 350°F for about 6–10 minutes until golden brown.
  3. Cook bacon on a lined baking sheet at 400°F for 13–18 minutes until crispy. Drain on paper towels and chop.
  4. Rinse chopped lettuce and dry thoroughly with a salad spinner; place in a large bowl.
  5. Add toasted almonds, chopped bacon, halved tomatoes, and cheeses to the lettuce.
  6. Shake the chilled dressing and pour over the salad. Toss gently with croutons before serving immediately.
