  • 150 g Ground Almonds
  • 150 g Gluten-free Plain Flour
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • ¼ cup Yoghurt
  • Juice and zest of 2 Lemons
  • ¼ cup Agave or Maple Syrup
  • ½ cup Milk
  • 1 tsp Vanilla Extract
  • Icing Sugar for drizzle

Instructions

  1. Preheat oven to 180°C (350°F). Line a loaf tin with parchment paper.
  2. In a bowl, combine ground almonds, gluten-free flour, baking powder, and baking soda.
  3. Add yoghurt, lemon juice & zest, agave/maple syrup, milk, and vanilla extract. Mix gently.
  4. Pour batter into the prepared tin and bake for 45-50 minutes until golden brown.
  5. While baking, prepare the lemon drizzle by mixing icing sugar with lemon juice.
  6. Once baked, poke holes in the loaf and pour the drizzle over it. Let soak for 10 minutes.
  7. Cool completely before slicing.
