  • 200 g Pitted Dates
  • 250 g Greek or Coconut Yoghurt
  • 70 g Coconut Sugar
  • 125 ml Milk of Choice
  • 240 g Wholemeal Flour
  • 1 tsp Baking Powder
  • For the Toffee Sauce: 150 g Greek or Coconut Yoghurt
  • 60 g Coconut Sugar

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a 20cm square baking dish.
  2. Soak the pitted dates in boiling water for at least 10 minutes.
  3. Blend soaked dates with half of the yoghurt until smooth.
  4. In a mixing bowl, combine date puree with remaining yoghurt, coconut sugar, milk, flour, baking powder, and salt; fold gently until just combined.
  5. Pour batter into the baking dish and bake for about 30 minutes or until golden brown.
  6. For the toffee sauce, heat coconut sugar and yoghurt in a saucepan until bubbly and golden.
  7. After baking, poke holes in the sponge and pour warm sauce over it.
