Ingredients

  • 90 g dark chocolate (chopped)
  • 240 g yogurt
  • 125 ml strong black coffee
  • 85 g coconut sugar
  • 90 g oat flour
  • 50 g cocoa powder
  • 100 g cream cheese (for topping)
  • 40 g liquid sweetener (for topping)
  • 1 tsp instant coffee powder (for topping)

Instructions

  1. Preheat the oven to 170°C (340°F) and line a baking tin with parchment paper.
  2. Melt the chocolate in a microwave-safe bowl or double boiler until smooth; set aside to cool slightly.
  3. In a large mixing bowl, whisk together yogurt, coffee, coconut sugar, and melted chocolate until smooth.
  4. Fold in oat flour, cocoa powder, baking soda, and salt until just combined.
  5. Pour the batter into the prepared tin and bake for 25–30 minutes until set but fudgy in the center. Allow to cool completely.
  6. For the topping, whisk together cream cheese, yogurt, liquid sweetener, and instant coffee until creamy.
  7. Spread the topping over cooled brownies and dust with cocoa powder. Chill for at least one hour before slicing.
