  • 8 ounces pasta (rotini, fusilli, or penne)
  • 2 medium zucchinis (sliced)
  • 2 cups cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 3 tablespoons olive oil
  • ¼ cup fresh basil (chopped)
  • Salt and black pepper (to taste)
  • Red pepper flakes (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente; reserve ½ cup cooking water before draining.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté zucchini for 3-4 minutes until golden brown.
  3. In the same skillet, add remaining olive oil and sauté minced garlic for 30 seconds. Add halved cherry tomatoes with salt; cook for about 5-7 minutes until softened.
  4. Return zucchini to the skillet along with cooked pasta. Toss to combine; add reserved pasta water if needed.
  5. Stir in chopped basil and season with salt, black pepper, and red pepper flakes.
  6. Serve warm, garnished with grated Parmesan if desired.
