  • 20 oz refrigerated cheese tortellini
  • 1 pint cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 cup kalamata olives
  • 1 cup fresh mozzarella balls
  • 1/2 cup salami or pepperoni (optional)
  • 2 cups baby spinach or arugula
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions until al dente. Drain and rinse under cold water.
  2. In a jar, combine olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, oregano, salt, and pepper. Shake well to emulsify.
  3. Toss warm tortellini with half of the dressing; let cool for 10 minutes.
  4. Add in cherry tomatoes, cucumber, red onion, olives, mozzarella, salami (if using), spinach, and basil. Pour remaining dressing over salad and toss gently.
  5. Cover and refrigerate for at least 2 hours before serving.
