  • 1 tablespoon butter
  • Salt and pepper, to taste
  • 1 pound boneless skinless chicken breasts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning, more to taste
  • 1 cup heavy cream
  • 1/4 cup chicken broth, or dry white wine
  • 1/2 cup Parmesan cheese, grated
  • 1-2 cups baby spinach
  • Fresh parsley, for garnish

Instructions

  1. Slice chicken breasts in half lengthwise for even cooking.
  2. Season both sides with salt and pepper.
  3. In a large skillet, heat olive oil and butter over medium heat; cook chicken until golden brown and cooked through (165°F). Remove and set aside.
  4. Sauté chopped onion until translucent; add minced garlic and sun-dried tomatoes with Italian seasoning.
  5. Whisk in chicken broth and heavy cream; stir in Parmesan cheese until smooth and simmer until thickened.
  6. Add spinach to wilt, then return chicken to the skillet, coating with sauce.
  7. Serve hot, garnished with fresh herbs if desired.
