  • Tomato paste
  • Chickpeas (canned)
  • Low sodium vegetable broth
  • Sun-dried tomatoes in oil
  • Coconut milk
  • Fresh spinach
  • Lemon juice
  • Salt and black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (3-4 minutes). Stir in minced garlic, oregano, and red pepper flakes; cook for another 1-2 minutes.
