Ingredients

  • Whole Wheat Flour (or gluten-free flour)
  • Almond Meal
  • Baking Powder
  • Blueberries
  • Olive Oil
  • Liquid Sweetener
  • Milk of Choice
  • Vanilla Extract
  • Lemon Juice & Zest

Instructions

  1. Preheat oven to 180°C (350°F) and grease an 8-inch baking pan.
  2. In one bowl, whisk together whole wheat flour, almond meal, baking powder, baking soda, and salt.
  3. In another bowl, mix olive oil, liquid sweetener, milk, vanilla extract, and lemon juice & zest until well combined.
  4. Gradually combine wet ingredients into dry ingredients without overmixing.
  5. Fold in blueberries gently with a rubber spatula.
  6. Pour batter into the baking pan and bake for about 25 minutes or until a toothpick comes out clean.
  7. Let cool for 10 minutes before transferring to a wire rack to cool completely.
