Ingredients

  • Smooth nut butter
  • Liquid sweetener
  • Whole oats
  • Cocoa powder
  • Vegan yogurt
  • Chocolate chips

Instructions

  1. Preheat oven to 180°C (350°F) and prepare your baking tin.
  2. In a mixing bowl, whisk together smooth nut butter, liquid sweetener, and optional vanilla extract until smooth.
  3. Blend whole oats into a fine flour using a blender or food processor.
  4. Add blended oats, baking soda, and salt to the nut butter mixture; fold until combined.
  5. Measure out 160g of dough into another bowl; fold chocolate chips into the larger portion for cookie dough.
  6. Mix cocoa powder and vegan yogurt into the smaller portion for brownie batter.
  7. Spread brownie batter evenly in the baking tin; layer cookie dough on top.
  8. Bake for 15-20 minutes until golden brown; cool before slicing.
