  • 150 g sugar
  • 50 g olive oil
  • 3 eggs
  • 1 tbsp vanilla extract
  • 200 g all-purpose flour

  • ½ tsp baking powder
  • 6 fresh plums

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake tin.
  2. Slice the plums in half, remove the pits, and cut each half into quarters.
  3. In a mixing bowl, whisk together yogurt, sugar, olive oil, eggs, and vanilla until smooth.
  4. Sift in flour, baking soda, and baking powder; gently fold until just combined.
  5. Pour the batter into the prepared tin and arrange plum slices on top.
  6. Bake for about 45 minutes or until a skewer inserted comes out with moist crumbs.
  7. Cool in the tin for 15 minutes before transferring to a wire rack.
