  • 1 pound ground spicy Italian sausage
  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • fine sea salt and freshly-ground black pepper
  • 6 pieces bacon, cooked and crumbled

Instructions

  1. In a large stockpot over medium-high heat, cook the sausage until browned, breaking it into small pieces.
  2. Use a slotted spoon to transfer the sausage to a plate and reserve 1 tablespoon of grease in the pot.
  3. Sauté the diced onion in the reserved grease for about 5 minutes until softened; add minced garlic and sauté for an additional minute.
  4. Add diced potatoes and chicken stock along with the cooked sausage back into the pot; bring to a simmer and reduce heat. Let simmer for about 10 minutes until potatoes are tender.
  5. Stir in chopped kale and heavy cream; simmer for another 5 minutes until heated through. Season with salt and pepper to taste.
  6. Serve warm, garnished with crumbled bacon.
